AACC’s culinary team earns 4 silver medals

MichaelSantos_PrintTeam Anne Arundel, the culinary competition group at Anne Arundel Community College’s Hotel, Culinary Arts and Tourism Institute, earned four silver medals at the American Culinary Federation-sponsored culinary salon Dec. 5 at Monroe College in New Rochelle, N.Y.

The students won the awards for their signature dishes. Each competitor was required to prepare two plates of their signature dish. They were evaluated on taste, nutritional value, presentation, organization and sanitation. 

Team Anne Arundel members winning silver medals and their signature dishes include:

•    Michael Santos of Glen Burnie, chicken breast stuffed with chicken forcemeat with a currant pan sauce, Israeli couscous, wild mushroom sauté and carrot frizzle garnish.

•    Carrie Svoboda of Stevensville, orange cardamom upside-down cake with caramel and blood orange sauces, cinnamon tuile hazelnut ice cream and a caramel curl garnish.

•    Heather Tompkins of Severn, bananas foster petite gateau with blood orange sauce, molasses-orange ice cream with chocolate crumble and décor.

•    Martha Walton of Gibson Island, cranberry-apple cake with fresh cranberry sauce, burnt honey ice cream and candied pecans, pecan tuile and sautéed apples.

Coaching the team are HCAT instructional specialists Chef John V. Johnson, C.E.C., C.C.E., A.A.C., and Chef David Ludwig, C.E.P.C., C.H.E.

Through its HCAT Institute, AACC offers associate of applied science Hotel/Restaurant Management degrees in Baking and Pastry Arts, Culinary Arts and Hospitality Business Management. It also offers credit certificates in Hotel/Lodging Management, Culinary Arts and Restaurant Cooking Skills, as well as continuing education certificates for the professional and noncredit courses for people who enjoy cooking.
